A vegetarian, gluten free, dairy free, refined sugar free cookbook by author and registered dietitian, Melissa Pickell, R.D. Melissa s Marvelous Meatless Meals provides the basics for those just getting started on a gluten free casein free (no dairy) diet as well as many healthful suggestions for those wishing to move to a vegetarian lifestyle and reduce their intake of refined sugar. Ms. Pickell, who is founder of New You Nutrition, a private practice based in Flemington, New Jersey, says she decided to write the book after her husband was put on a strict diet of no gluten, dairy, or sugar for health reasons. A gluten free diet is complicated enough, but being vegetarian adds some extra challenges. For gluten free vegetarians, meal planning can be additionally complicated since many of the commercially available alternative protein sources contain wheat gluten and soy sauce which both have wheat. The author says she was already preparing most foods from scratch but now had to be vigilant in label reading as well. Unsuccessful gluten free bread baking led her to explore what options were available in books. The books that were vegetarian were not gluten or dairy free, the books that were gluten free were not vegetarian or dairy free, and most cookbooks did not seem to pay any attention to reducing sugar. So Pickell decided to write her own. Ms. Pickell states that her recipes are not time consuming since she has a busy family schedule. I hope my recipes will reach an audience of those who are trying to live a healthier lifestyle by cooking more, eating less meat, less wheat, and less sugar. In my home, we aim to cook a meal that works for everyone, regardless of their food restrictions. I have tried to take the recipes that we have enjoyed as a vegetarian family and find ways to make them dairy, gluten, and sugar free. I hope that my recipes will take some of the fear out of gluten free vegetarian meal planning and put back some of the joy of eating. Melissa Pickell received her B.S. degree in Clinical Nutrition from Syracuse University in 1984 and spent the next 16 years working as a registered dietitian and certified diabetes educator. She is now providing nutrition counseling and weight loss coaching through her private practice, New You Nutrition.

Exactly what we needed to improve our health

I have been eating gluten-free for several years, and pride myself on being able to cook for various diets, but I panicked when my husband announced he needed to eat a vegan diet for his health. Most of the vegan/gluten-free cookbooks that I tried were helpful, but seemed to be very dependent on nightshade vegetables like tomatoes, peppers, potatoes, and eggplant, that unfortunately increase my pain from arthritis. This cookbook includes recipes with nightshades, but most recipes do not depend on using them. Melissa's cookbook allows eggs, but offers appropriate substitutes for strict vegans. These recipes are exactly what we needed to improve our health and introduce variety into our limited diets. This has become my favorite cookbook for cooking vegan. Most of the recipes are not time consuming. Even our omnivore sons are enjoying eating food I've made from Melissa's recipes. And Melissa's recipes for baked goods like muffins are awesome! The best I have tried. Thank you Melissa for helping us to happily make this transition towards good health. By the way, my husband and I have each lost about 20 pounds in the 2 1/2 months since we started eating vegan and using this cookbook, yet neither of us feel deprived at all. I still look at the other cookbooks for recipe ideas, but find myself coming back to cook the recipes in this cookbook.

Absolutely wonderful

This is an awesome cookbook--it's my new favorite and I have a LOT of cookbooks! At first I wasn't sure I'd like it because I really like a lot of mouthwatering photos. This book has several nice pics but not a ton. However, all the recipes I've tried have been simple, easy, and delicious! Even my husband, a meat eater, has enjoyed all the dishes we've sampled so far. Because I have issues with gluten and dairy it's often hard to find a cookbook that I can use. Melissa's Marvelous Meatless Meals fits the bill. I would recommend it to anyone who is interested in preparing easy and delcious meals and snacks. Whether you have gluten/dairy issues or not you're sure to enjoy this cookbook.

These recipes actually taste GOOD!

I have struggled with fibromyalgia, food sensitivities, and allergies for years. When it was finally discovered that the FMS symptoms disappeared when I actually followed my rotary food sensitivity diet, I was ecstatic. Until I started trying to follow the diet while cooking for the family: dairy/egg-free, gluten-free, soy-free, oh my! YUCK was the nicest thing that was said!
Then I discovered Melissa's book. And my family started LIKING food again. We are not meatless and the entres are great with chicken or other meat/fish added. I have cooked almost exclusively from the book for nearly a year, from appetizers through some really sinful desserts, and we still like them--no more YUCK! (In fact, it was Melissa's chocolate raspberry cake that my husband requested for his birthday!)
Melissa's ability to substitute non-restricted for traditional ingredients, turning them into "normal" tasting foods, is a great skill, and we are greatful that she is sharing the recipes with us.
