About the Author
Pauli Halstead has been a Bay Area and Wine Country chef for over 30 years, beginning with her San Francisco restaurant, Pauli's Cafe in 1975. As owner of the successful Napa Valley catering company, The Best of Everything, Pauli provided stellar cuisine for many of California's world class wineries, elegant country weddings and private clients. Pauli now resides in Walnut Creek, California where she teaches classes and consults with people in their homes on how to transition to a healthier eating lifestyle.

Hope you like dairy

If you are interested in eliminating gluten, grains, sugars and carbohydrates from your diet; if you wish to avoid soy and GMOs; if you want recipes that use organic vegetables, grass-fed meat, and wild-caught fish, then this book will inspire you. If you like using coconut oil/coconut milk and almond butter/almond milk - as I do - then you will find many recipes utilizing them here, as well.

If on the other hand, you cannot handle dairy, you may find it challenging to make many of these recipes - as they call for yogurt, cheese, butter, whipped cream, sour cream, etc. The author states that you may be able to substitute ghee for the butter, as ghee is lactose-free. For the others - like I say, a challenge.

More than just a collection of easy and delicious recipes

More than just a collection of easy and delicious recipes (which it features in abundance), "Cuisine for Whole Health" also offers informed and informative counsel on successfully minimizing carbohydrates, getting daily protein requirements cared for, identifying those oils and fats that will improve the nutritional quality of what we eat, foods to avoid for our body's sake, as well as key ingredients along with where they can be found. Of special note is the sage advise on how to save money by eating sustainably -- for both ourselves and our Mother Earth. The gourmet quality, palate pleasing, appetite satisfying, 'kitchen cook friendly' recipes range from a Pacific Rim Tuna Salsa, to a Hearty Vegetable Soup with Pesto, to a Grilled Tomato Ketchup, to Short Ribs Braised in Zinfandel, to Baked Figs with Lavender and Almond, and so many more!! If you only have room on your kitchen shelf for one more cookbook, make it Pauli Halstead's "Cuisine for Whole Health: Recipes for a Sustainable Life"!

Wonder Cook Book from a Wonder Chef

I was fortunate enough to live with Pauli Halstead at the HeartGate Sanctuary ashram, and helped her photograph the food and design the book. My review is of course biased, as she is a dear friend; nevertheless, her cooking easily stands out among the best food I've ever tasted. I was so blessed to be there when Pauli MADE me eat the creations she made for the photos. Not only the best organic food I've ever eaten, but expertly crafted!
My personal favorite food is Thai cuisine. There are a few recipes that deal with this obsession, and they have defied my logic that the best Thai food comes from Thai restauarants. The best Thai food actually comes from following amazing recipies at home from this book, and I'm sure others like it.
Going totally organic and healthy is a priority she ushers us to make a part of our diets, and the exemplary tastes are a natural result. Not only are you going to find recipes, but you'll be very conveniently whelmed by a wealth of information about the dangers and secrets of shopping in our food industry, as well as amazing sources for the best deals on quality cooking ingredients, from all over the world, especially locally. Any aspiring or proficient chef should have this in the kitchen!
