Blue Bamboo Restaurant is a popular Jacksonville, Florida dining establishment that Dennis Chan established in 2005. Judging by the mouth-watering recipes he has compiled in the profusely illustrated pages of Hip Asian Comfort Food, he has richly deserved his culinary success as a restaurateur. Each featured recipe begins with a brief introductory paragraph of commentary, followed by serving size information, ingredients list, and step-by-step instructions. After a year of photo shoots, edits and recipe tests, Blue Bamboo owner Dennis Chan held the first completed copies of his cookbook, Hip Asian Comfort Food, in his hands last week. The book features more than 100 recipes and, like his approach to cooking, borrows heavily from culinary traditions of the East and West. Inside you'll find recipes for Panko Fried Chicken with creamed peas alongside Korean Braised Short Ribs. Each dish is beautifully photographed by Linda Blakely, who is also from Jacksonville. For Chan, the blending of cultures is only natural. Chan was born to Ming and Phyllis Chan. Their parents, Chan's grandparents, came from China to Jacksonville in the 1920s and 1930s. Over the years, his family would own a dozen Chinese restaurants here, such as Eng's Golden Dragon and Little Dragon, both of which were downtown. Eager to learn more about his roots, Chan majored in East Asian Languages and Literature at the University of Florida. He even studied in China and is (almost) fluent in Cantonese and Mandarin. But Chan is also a Jacksonville native who grew up eating biscuits and fried green tomatoes - one of his mother's favorites. He played Pac-Man, listed to Journey and watched 90210. And, although some of his relatives struggled with English, he has no accent. So, when Chan went to the prestigious Culinary Institute of America in New York, it was natural that he was drawn to fusion cooking, combining his interests - culinary and otherwise - in Asia and America. Chan cemented his approach after he interned with Ming Tsai, the owner of Blue Ginger in Massachusetts and host of PBS' Simply Ming Tsai, known for his fusion style of cooking, happens to be giving a sold-out cooking demonstration Friday at the Publix Apron's Cooking School on San Jose Boulevard. Chan opened Blue Bamboo at 3820 Southside Blvd. in 2005. He said he wanted to write a cookbook because of the overwhelming response to his monthly cooking classes. Although they started with just a couple of people in the kitchen, they've grown exponentially. Last month's class had 48 people in attendance. To test the recipes, Chan said he used about 20 different home cooks, many of whom are regular customers. I wanted to make sure people who weren't professionally trained could do the recipes, he said. If something seemed too complicated, it was broken down to its most simple form. The basis of this restaurant is to not be snobby but be approachable yet still professional. That's what I wanted with the cookbook. I made one dish from Hip Asian Comfort Food, the Red Curry Shrimp and Grits. I was impressed with how easy it was. The shrimp dish only called for 10 ingredients, and I already had many of them on hand. And, the whole meal was ready by the time the grits were cooked, about 30 minutes. Asked if he was cautious about sharing his restaurant's cooking secrets, Chan balked: In our cooking classes, we give out the 'secrets' all the time, and we still have those same people come back that night for dinner. Restaurant cookbooks are about more than just recipes. They're a window into the secrets of the cuisine they serve. That's why I was eager to get my hands on a new local cookbook by Dennis Chan, the chef and owner of one of my favorite restaurants, Blue Bamboo. The gorgeous book is titled Hip Asian Comfort Food. Not only does it have beautiful pictures (kudos to photographer Linda Blakely) and easy to follow recipes, it gives you a peek as to what goes on in Dennis Chan's wok. Lots of the restaurant favorites and signature items are included. Chan's East-meets-West recipe stylings are endorsed by none other than Ming Tsai of Food Network fame, who hosted East Meets West and is currently hosting two cooking shows on Public Television and on Fine Living. Dragon Whiskers are an appetizer that we always order at Blue Bamboo, so we were happy to see a recipe in the book. While ours were pretty good, I'll be coming back to Blue Bamboo instead of making them at home. Unfortunately, we don't have a deep fryer or a fry basket, so we weren't able to reproduce it exactly. I also think that his whiskers are cooked much more briefly and at a higher temperature than we tried to cook ours. It was more failure of lack of equipment than a failing of the recipe. That being said, if I had never had Dennis' version, I would have been plenty happy with our slightly crispier, messier version. Thumbing through the book, I found that most of the dishes required very little in specialized equipment and most were simple enough that even a novice could pick up the book and serve some excellent cuisine. The Honey Soy Glazed Burger is a marriage of something quintessentially Western, cooked with Eastern flavor and it looks easy but tasty to undertake. My husband tried his hand at the Rama Thai Delight. He rarely cooks and is generally unsure of himself in the kitchen, but he was able to execute it with little trouble, thanks to the easy instructions. It's a red Thai curry and peanut recipe that you can use as a base for chicken, beef or shrimp. We expected the dish to bring more heat than it did, but it was flavorful and easy to execute. It's a great dish for those that like a little heat and want to try something slightly exotic. One of the recipes in the book that I was excited to see was the Coconut Lemongrass Crab Cakes. I had actually tried to reproduce my own version at home after tasting the crab cakes at Blue Bamboo before I knew about the recipe book. It settled an argument as to whether or not there was coconut cream in the crab cakes, or just in the sauce. (Score one for me, I was right! It's just in the sauce.) I had nearly everything right, though I didn't catch the crab boil seasoning, and instead added a little sriracha chili sauce. I'm glad to be able to reference the real thing. While the baking recipes are precise in measurement, the cooking recipes are sometimes a little looser, although they're still easy to follow. Thai Tea Creme Brulee is the dessert that I keep coming back to at Blue Bamboo. Now I can make it at home thanks to the recipe on page 170. Another Blue Bamboo classic is the Mandarin Orange Cake, which is a great balance between creamy sweetness and citrus tartness. The secret might be the pineapple creme cheese frosting. If you're looking for yummy and unique drinks to serve at your next cocktail party then look no further than the Potables section of the recipe book. Eastern flavors make Western-style cocktails fresh and new again, as with the Vietnamese coffee martini, the lemongrass infused vodka martini and the cucumber lime saktail (which is made with smooth cold sake instead of vodka.) There are also some interesting non alcoholic options, such as a classic red thai tea and a yummy sounding ginger milkshake. --Entertainingu Magazine

Dennis Chan is a native of Jacksonville, Florida, and holds both his family's food-centric culture and spirit of ingenuity close to his heart. Following in the tradition of his family's 12 successful restaurants, Dennis opened Blue Bamboo in 2005. This accomplishment is the result of many years of study- both independent and academic; first in his grandfather's kitchen as a child, at the University of Florida, and then at the Culinary Institute of America. In addition, Dennis has the distinction of being the first to intern at Ming Tsai's Blue Ginger restaurant. Fabulous Food

Having eaten many times at Blue Bamboo, the book is just a natural extension of the wonderful food and ambiance of the restaurant. Dennis' passion for his food and recipes jump from every page. Delicious but down to earth. A great, fun cookbook for a couple to enjoy cooking together over a glass of wine.
Speaking of wine, Dennis takes special interest in stocking a wonderful selection. If you are not sure, don't hesitate to ask Dennis; give him a color, a price range for your limit, and answer a few of his questions and he never misses!!!

Terrific Cookbook

I received this book as a gift and was thrilled when I read it. The recipes were easy to follow and used ingredients that were not too hard to find, even in the Midwest! I prepared the Chili Noodle Salad Forks for the office Christmas party, resulting in several people asking me for the recipe! I can't wait to try more recipes during the holiday break, especially the cocktails and the caramel brownie.
