Excellent Primer
By Don Lambert
This book covers the basics and some specifics of making ice cream for the serious home ice cream maker. It provides adequate information to start as a training handbook for a new parlor or small commercial producer. I thought it was well organized in both overall topics as well as step by step processes including organizational tips and alerts to help avoid problems.

There is reasonable introductory information about equipment and supplier sources nationally that the reader can take as a lead to finding local vendors and suppliers.

The author does discuss the interactive affects of various ingredients. While basic controls such as overrun and butterfat content are covered, the book is not a manual of ice cream science. It is about making high quality ice cream by controlling and enjoying the process and the product. The many recipes offered are separated and broken down for small commercial production as well as home batch sizes. The reader can adapt recipes for their own size batches.

A good read for the person who wants to make premium ice cream.

Best ice cream book ever...especially if you are in the biz
By Linda M. Smith
This is the best of the best ice cream cook books. It isn't ideal for home use unless you are a foodie. I am amazed at how helpful it is for the small business owner. You will be shocked at the results. I tend to stray from the recipes regularly, but they give me a firm foundation from which to work. Love it so much!

Not really for me
By chris
Im sure this is a helpful book for 20+ shops, that deal mostly with large scale commercial work, but I found the book hard to read and containing little value for the custom kitchens I build. There are very few pictures and drawings, lots of over lapping context about ( what i consider ) obscure material i.e. particle board, melamine, and other laminates. I bought the book hoping I could learn more about the standards for cabinet construction, such as size, dado details, material choses ect. I didn't find it helpful for that. But thats just me......

Gunvalson's lessons that most business people already learned at age 18
By The Yorkie Place
The gushing reviews about this book are confusing. Gunvalson's "revealing information" is merely a glossing-over of what most people learn in high school classes and at part time teenage jobs. Nothing new here, nothing particularly interesting. If you want a book about business or management, avoid this one; you'd be wasting your time.

DON'T WASTE YOUR MONEY!
By Jules
WOW--what a disappointment. I am a fan of the OC Housewives, and thought that reading about Vicki would be interesting. Well, it could have been, except for the HUGE amounts of typos & grammatical errors--YIKES. It made it very difficult to read. It surprised me that Vicki allowed this to happen, she seems like such a stickler for details on the show. I am sorry that I wasted $25 on this PAPERBACK. I have worked in a bookstore and a library for several years and believe this has to be the among the lamest books I have ever seen published. (Whatever happened to proof readers????) It definitely didn't go on my keeper shelf.

Woo Pooo.
By PondFrog
So this starts out insulting most of the women that would want to buy it, by the man who wrote the book for Vicki. Yeah, all you "housewives" out there "watching soap operas all day" need not apply. (Doesn't he know about DVRs and most watch after getting chores done all day, and that there are only a few soap operas even left on TV?) As a matter of fact, all the women out there running a household right now, that thought this book would be fun and give you ideas to create, without sacrificing your first job, are not welcome here by him nor Vicki. Amazing they had NO clue who the money paying target audience would be for this book! How is that good business?

Now as smart as she is with a pencil, there is no pencil pushing for the fact many housewives SAVE more family income by being at home and running the household than dropping everything for work outside (or even inside) the home. "Housewives" are devalued and degraded non stop throughout, like you never evolved and climbed out from under a rock and make no contribution to your family nor society.

The business advice does have some merits, such as don't mortgage the farm or the house to make your business float or get started. Self employed is the best.

Vicki has a huge chip on the shoulder for any woman that is married to a man that makes more money or what she thinks is "the" money. What a stupid horse race. I say bravo and hats off to those women! Income is income.

In most normal marriages, this attitude that women are going to be destitute if their spouse passes away is insulting. She glorifies herself as she gets to run in with a check after a husband dies, like a saviour for the poor old pathetic gal, but seems to never enter her mind how the wife and husband designed it that way, together, and ALWAYS their money, not yours to give. Quite frankly, that is what her business is built on, men and women working together and spending income on insurance policies, not just men coddling "bored housewives".

It was the Bravo show, through luck of the draw, not her hardwork that catapulted her business, to pay her mortgage and her expenses to keep up with the other ladies on the show. Oh and you will be reminded more than once, that this Housewife show was created because of her son, because he wrote a letter to be on a show. Yep, the same moocher son you have seen ad nauseam.

The chapter on fan's letters is sickeningly padded with cush cush questions and set ups to slam another cast member. You will truly skim this part.

She does not talk about her heavy drinking in this book, but worries if you do cuss around your kids or if they have uniforms in school. She does talk about wanting to retire to bake cookies, after she just wrote a book about how wasteful, useless those things really are.

In several incidents in the book, she re-explains and re-tweaks what we all saw on the show. It's tedious and feels like someone who thinks she can never be wrong, or even just laugh at herself. She spends way too much time trying to glossy up the past, and it feels awkward as you read through it.

I have to agree with another reviewer that said this was so poorly written and grammatical errors throughout. Who doesnt know it's rein...as in the reins of a horse bridle, not reign, a word she uses more than once to "grab a hold of". Please note that this was an Amazon verified purchase by me, I wanted to like this book, and get something from it for my hard earned dollar and just giving an honest review. Book was over groomed and felt too self back patting and too many harsh judgments of other succesful lifestyles.

Review
Blue Bamboo Restaurant is a popular Jacksonville, Florida dining establishment that Dennis Chan established in 2005. Judging by the mouth-watering recipes he has compiled in the profusely illustrated pages of Hip Asian Comfort Food, he has richly deserved his culinary success as a restaurateur. Each featured recipe begins with a brief introductory paragraph of commentary, followed by serving size information, ingredients list, and step-by-step instructions. The recipes themselves are organized into colorful chapters featuring 'Street Eats', 'Potables', 'Plates', 'Mein Street', and 'Happy Endings'. The dishes themselves range from Crispy-Spicy Oysters; Warm Chai Tea; Kung Pao Tofu; and Vietnamese Coconut-Curry Rice Noodles with Duck; to Easy Jasmine Rice; Kabocha Squash Wontons; Peanut Butter Trifle; and Asian Sangria Granita. Hip Asian Comfort Food is an ideal, gourmet quality, highly recommended collection of recipes that would grace any personal, family, or community library regional/ethnic cookbook collection. --Midwest Book Review

After a year of photo shoots, edits and recipe tests, Blue Bamboo owner Dennis Chan held the first completed copies of his cookbook, Hip Asian Comfort Food, in his hands last week. The book features more than 100 recipes and, like his approach to cooking, borrows heavily from culinary traditions of the East and West. Inside you'll find recipes for Panko Fried Chicken with creamed peas alongside Korean Braised Short Ribs. Each dish is beautifully photographed by Linda Blakely, who is also from Jacksonville. For Chan, the blending of cultures is only natural. Chan was born to Ming and Phyllis Chan. Their parents, Chan's grandparents, came from China to Jacksonville in the 1920s and 1930s. Over the years, his family would own a dozen Chinese restaurants here, such as Eng's Golden Dragon and Little Dragon, both of which were downtown. Eager to learn more about his roots, Chan majored in East Asian Languages and Literature at the University of Florida. He even studied in China and is (almost) fluent in Cantonese and Mandarin. But Chan is also a Jacksonville native who grew up eating biscuits and fried green tomatoes - one of his mother's favorites. He played Pac-Man, listed to Journey and watched 90210. And, although some of his relatives struggled with English, he has no accent. So, when Chan went to the prestigious Culinary Institute of America in New York, it was natural that he was drawn to fusion cooking, combining his interests - culinary and otherwise - in Asia and America. Chan cemented his approach after he interned with Ming Tsai, the owner of Blue Ginger in Massachusetts and host of PBS' Simply Ming Tsai, known for his fusion style of cooking, happens to be giving a sold-out cooking demonstration Friday at the Publix Apron's Cooking School on San Jose Boulevard. Chan opened Blue Bamboo at 3820 Southside Blvd. in 2005. He said he wanted to write a cookbook because of the overwhelming response to his monthly cooking classes. Although they started with just a couple of people in the kitchen, they've grown exponentially. Last month's class had 48 people in attendance. To test the recipes, Chan said he used about 20 different home cooks, many of whom are regular customers. I wanted to make sure people who weren't professionally trained could do the recipes, he said. If something seemed too complicated, it was broken down to its most simple form. The basis of this restaurant is to not be snobby but be approachable yet still professional. That's what I wanted with the cookbook. I made one dish from Hip Asian Comfort Food, the Red Curry Shrimp and Grits. I was impressed with how easy it was. The shrimp dish only called for 10 ingredients, and I already had many of them on hand. And, the whole meal was ready by the time the grits were cooked, about 30 minutes. Asked if he was cautious about sharing his restaurant's cooking secrets, Chan balked: In our cooking classes, we give out the 'secrets' all the time, and we still have those same people come back that night for dinner. I'm just happy to share. Chan shares his recipe for Red Curry Shrimp and Grits on Page E-2. Copies of Hip Asian Comfort Food can be purchased for $34.95 at a few local bookstores and at Blue Bamboo. --Florida Times Union

Restaurant cookbooks are about more than just recipes. They're a window into the secrets of the cuisine they serve. That's why I was eager to get my hands on a new local cookbook by Dennis Chan, the chef and owner of one of my favorite restaurants, Blue Bamboo. The gorgeous book is titled Hip Asian Comfort Food. Not only does it have beautiful pictures (kudos to photographer Linda Blakely) and easy to follow recipes, it gives you a peek as to what goes on in Dennis Chan's wok. Lots of the restaurant favorites and signature items are included. Chan's East-meets-West recipe stylings are endorsed by none other than Ming Tsai of Food Network fame, who hosted East Meets West and is currently hosting two cooking shows on Public Television and on Fine Living. Dragon Whiskers are an appetizer that we always order at Blue Bamboo, so we were happy to see a recipe in the book. While ours were pretty good, I'll be coming back to Blue Bamboo instead of making them at home. Unfortunately, we don't have a deep fryer or a fry basket, so we weren't able to reproduce it exactly. I also think that his whiskers are cooked much more briefly and at a higher temperature than we tried to cook ours. It was more failure of lack of equipment than a failing of the recipe. That being said, if I had never had Dennis' version, I would have been plenty happy with our slightly crispier, messier version. Thumbing through the book, I found that most of the dishes required very little in specialized equipment and most were simple enough that even a novice could pick up the book and serve some excellent cuisine. The Honey Soy Glazed Burger is a marriage of something quintessentially Western, cooked with Eastern flavor and it looks easy but tasty to undertake. My husband tried his hand at the Rama Thai Delight. He rarely cooks and is generally unsure of himself in the kitchen, but he was able to execute it with little trouble, thanks to the easy instructions. It's a red Thai curry and peanut recipe that you can use as a base for chicken, beef or shrimp. We expected the dish to bring more heat than it did, but it was flavorful and easy to execute. It's a great dish for those that like a little heat and want to try something slightly exotic. One of the recipes in the book that I was excited to see was the Coconut Lemongrass Crab Cakes. I had actually tried to reproduce my own version at home after tasting the crab cakes at Blue Bamboo before I knew about the recipe book. It settled an argument as to whether or not there was coconut cream in the crab cakes, or just in the sauce. (Score one for me, I was right! It's just in the sauce.) I had nearly everything right, though I didn't catch the crab boil seasoning, and instead added a little sriracha chili sauce. I'm glad to be able to reference the real thing. While the baking recipes are precise in measurement, the cooking recipes are sometimes a little looser, although they're still easy to follow. Thai Tea Creme Brulee is the dessert that I keep coming back to at Blue Bamboo. Now I can make it at home thanks to the recipe on page 170. Another Blue Bamboo classic is the Mandarin Orange Cake, which is a great balance between creamy sweetness and citrus tartness. The secret might be the pineapple creme cheese frosting. If you're looking for yummy and unique drinks to serve at your next cocktail party then look no further than the Potables section of the recipe book. Eastern flavors make Western-style cocktails fresh and new again, as with the Vietnamese coffee martini, the lemongrass infused vodka martini and the cucumber lime saktail (which is made with smooth cold sake instead of vodka.) There are also some interesting non alcoholic options, such as a classic red thai tea and a yummy sounding ginger milkshake. --Entertainingu Magazine

An ideal, gourmet quality, highly recommended collection of recipes
By Midwest Book Review
The Blue Bamboo Restaurant is a popular Jacksonville, Florida dining establishment that Dennis Chan established in 2005. Judging by the mouth-watering recipes he has compiled in the profusely illustrated pages of "Hip Asian Comfort Food", he has richly deserved his culinary success as a restaurateur. "Hip Asian Comfort Food" is an ideal, gourmet quality, highly recommended collection of recipes that would grace any personal, family, or community library regional/ethnic cookbook collection.

Fabulous Food
By Rhino 67
Having eaten many times at Blue Bamboo, the book is just a natural extension of the wonderful food and ambiance of the restaurant. Dennis' passion for his food and recipes jump from every page. Delicious but down to earth. A great, fun cookbook for a couple to enjoy cooking together over a glass of wine.
Speaking of wine, Dennis takes special interest in stocking a wonderful selection. If you are not sure, don't hesitate to ask Dennis; give him a color, a price range for your limit, and answer a few of his questions and he never misses!!!

Terrific Cookbook
By D. Hawes
I received this book as a gift and was thrilled when I read it. The recipes were easy to follow and used ingredients that were not too hard to find, even in the Midwest! I prepared the Chili Noodle Salad Forks for the office Christmas party, resulting in several people asking me for the recipe! I can't wait to try more recipes during the holiday break, especially the cocktails and the caramel brownie.

Deep Nutrition: Why Your Genes Need Traditional Food, by Catherine Shanahan MD, Luke Shanahan MFA

Deep Nutrition illustrates how our ancestors used nourishment to sculpt their anatomy, engineering bodies of extraordinary health and beauty. The length of our limbs, the shape of our eyes, and the proper function of our organs are all gifts of our ancestor's collective culinary wisdom. Citing the foods of traditional cultures from the Ancient Egyptians and the Maasai to the Japanese and the French, the Shanahans identify four food categories all the world's healthiest diets have in common, the Four Pillars of World Cuisine. Using the latest research in physiology and genetics, Dr. Shanahan explains why your family's health depends on eating these foods. In a world of competing nutritional ideologies, Deep Nutrition gives us the full picture, empowering us to take control of our destiny in ways we might never have imagined.

Deep Nutrition is an approved textbook for these health professionals and can be purchased using CEU monies. See the Numedix website for more information.

From the Author
One of our favorite passages in the book speaks to the importance of our ability to gauge beauty. Contrary to what we typically hear, the fascination for good-looking people is not a new phenomenon created by Hollywood. Nor is it about vanity. Rather, the instinct for beauty reflects a deep-seated, primal survival skill that has enabled us to reliably select the healthiest mates and pass on the healthiest genes to our offspring.

Unfortunately, the introduction of industrial food into our bodies has also impacted our genetic expression and, for reasons described in Chapters Two and Three, this means that optimal growth is now relatively more rare and precious than it was in the past.

Once we better appreciate how wandering from our ancestral nutritional path can affect us so powerfully, we can better appreciate the power of real food to set our bodies back on track.

About the Author
Cate Shanahan, MD is a leading authority on nutrition. Trained in biochemistry and genetics at Cornell, Dr. Cate has two decades of experience examining the effects of food choices on a person's metabolism, brain health, immune and reproductive systems and skeletal and muscle development.

While living in Hawaii, she found that older patients tended to be the healthiest in their family. Unlike their descendants, they were raised on traditional foods, typically endowed with strong joints and sturdy bones, and relatively few needed glasses or braces as children. Dr. Cate now helps patients obtain those same kinds of foods in order to repair damaged metabolic pathways and optimize gene expression.

Luke Shanahan, MFA graduated from University of Iowa where he attended the prestigious Writers' Workshop as an undergrad. Since graduate school, he has taught and lectured around the country and continued to pursue his interests in literature, art, and science.

The couple designed the Los Angeles Lakers new diet, and, for the benefit of adults and children everywhere, hope to make well-sourced foods a bigger part of sports-coolness than sugary drinks.

Powerful and Deep Nutrition
By docfor ME
I just finished reading Deep Nutrition, Twice.

As a cardiologist, the first time I read it was to see what was in there. I found it to be very interesting. She gets down to the facts quite well. At the same time, I found a fascinating presentation of nutrition, genetics, anthropology, history, medicine, metabolism, and cooking. It is a book that I can refer to my patients as a resource, and to colleagues as a reference.

The second time I read it was right after the first. I realized that there was so much information in there,so "nutrient dense", that I had to read it again to really "consume and digest" (parden the puns, but no other way to say it) the wealth of information.

I recommend this book highly to anyone who is interested in food, nutrition, or metabolism, and in fact I recommend it to anyone who consumes food and nutrition, that is, anyone who can read and has a life. You will be thankful that you invested the time to read it.

Good, but not Great. Falls short of Weston A Price principles
By Idle Wild
I really, really thought I would love this book. I had been wanting to buy it for a year or so and finally when I found out I was pregnant (with #3) I had the justification I needed to go ahead :)

I was unsure of whether to give this book 4 or 3 stars...I still would recommend it, just with some reservations.

Shanahan does a good job of explaining why and how sugar/HFCS is so terrible for us. Good knowledge to keep in mind whenever the cravings hit. the biochemical chaos that ensues from eating very much of these foods is down right scary.

She also does a good job of explaining why and how transfat and industrial seed oils (canola, soy, corn, etc) are the real big kahuna of unhealthy foods; she follows up with why traditional fats like butter, coconut oil, EVOO are beneficial. this is something I already took to heart (no pun intended!) and I think she did a pretty good job of illustrating this point.

She has a very good chapter on collagen formation, which I learned a lot from.

Shanahan's writing style flows off the pen like honey- it sounds sweet and enticing and is easy to swallow. Unfortunately, I also found this to be a pitfall. Sometimes the words come too easy, and I think she gets ahead of herself and doesn't back herself up enough.

The field of epigenetics is revolutionary and has important implications for our lifestyle choices. But it will not "change your genes" as she often blurts out- it will change how your genes express. Of course a traditional diet is not going to turn you into claudia schiffer or michael jordan unless you started out with that genetic blueprint. Though Shanahan implies this throughout the book, I think she gets a bit overexcited and overstates herself. She also promises that by following a traditional diet, you can overcome genetic shortcomings and have a perfect baby- one who turns heads and engenders envy in the sports arena. Well, maybe- big maybe. Lets say your parents ate a typical standard american diet, and you bore the brunt of that with less than ideal physical proportions- slightly crowded teeth, underdeveloped cheekbones, thin upper lip, and you didn't get much taller than them. But lets say that your grandparents and ancestors before all followed a very rich traditional diet- so you are only one generation away from what that inferred. Get yourself and your partner back on track months or years before conception, you may very well have a baby that is more well developed, very beautiful and athletic, vigorous. But as Francis Pottenger discovered (whom Shanahan refers to, but misses the point), one generation of dietary shortcomings can (unfortunately) take multiple generations of correct diet to recover. Now lets say not only your parents but your grandparents as well ate a typical modern diet, lacking in those essential fat soluble vitamins needed for proper development and genotype. You may or may not be able to overcome that with a few months of extremely careful diet and supplementation and produce as Shanahan promises a perfect baby. I don't mean to sound like Debbie Downer- I face these facts myself, especially as a parent. I am trying my hardest, but I don't get bogged down in how perfect my children look or otherwise turn out. Of course, like any parent, I just want my children to be healthy and happy. But I do have some qualms that Shanahan gets ahead of herself and makes false promises and exagerrated claims about a traditional diet. Of course it is critical to follow a diet like this during childbearing years- just don't think it will guarantee you a supermodel or professional athlete for a child. Of course I don't think many of us do, but Shanahan leads us to believe we could.

Another problem I have is that Shanahan really misses the boat on what Weston A Price established in his research, which is that the fat soluble vitamins (A,D,E,K) found in animal foods are essential for carrying on the proper genetic material. Shanahan rightly points out how proper diet ensures the ideal proportions and symmetry to give your child a beautiful face, but does not even mention that it is vitamin A (true vitamin A, not beta carotene) that makes this possible. I am really scratching my head as to how she could leave this crucial information out. Instead she falls back on recommending a synthetic prenatal to most of her patients, but does not seem to understand that the real importance to pregnant women, esp before conception, is these fat soluble vitamins. She recommends cod liver oil, because of the omega 3's- traditional (fermented) cod liver oil is rich in fat soluble vitamins which is what makes is a super food, not the omega 3's. Vitamins A, D, K found in pastured animal products or wild seafood, are absolutely essential to proper cellular division in the beginning of pregnancy (otherwise you will have a miscarriage because the cells did not differentiate)and also to the organs and other body parts forming, to bone structure which includes not only facial symmetry but stature and pelvic opening- so important for women to bear children, brain and nervous system development, on and on. I am just really dumbfounded how someone who studied Weston A Price could not include this info. Its like she got so caught up in facial symmetry and the plastic surgeon Dr. Marqhardt, that she stopped short of comprehending the actual cause of facial symmetry, good health and ideal genetic expression which has a very specific nutritional foundation: fat soluble vitamins and their co-factors found in animal foods.

Which brings me to another problem I had with this book. Shanahan seems so enamored of the plastic surgeon and his work, the beauty mask that describes perfect facial symmetry; this obsession overshadows the real pioneering work of Dr. Weston A Price. In the first chapter, she talks at length about the plastic surgeon, then briefy alludes to Weston A Price, and not even by name! This plastic surgeon's work has to do with how you can come to him so he will "fix" your face, what a contribution to society. Dr. Weston A Price's research has far reaching implications for ourselves and our future generations, for restoring our health and genetic potential through proper diet. Dr. Price's work is invaluable to us, it came at a critical time in history when he could study both traditional diets and those who switched to a modern diet. Nobody else has accomplished what he did. His work has true merit to all of civilization, not just Hollywood types who get plastic surgery. Why Shanahan relies so heavily upon photos of celebrities and their siblings, when she could have turned to Price's photos of families on traditional vs. modern diets also leaves me scratching my head. Price's photos give us a much clearer illustration of the destruction of modern diets, yet she would rather include pictures of Prince Harry and Prince William or Matt Dillon and his younger brother Kevin, with their minor "imperfections". She is stretching so far to prove her point, I feel she undoes some of it, unfortunately. Instead she should have relied on Weston A Price and his irrefutable, well researched work- which also would have led her to share the importance of fat soluble vitamins.

The dietary suggestions at the end of the book are incomprehensible. There are only 3 scant pages of suggestions, and many of them are not very good or downright contradict her previous advice. She extols the virtues of raw milk, but then at the end says it is okay to drink organic store bought milk. This milk is not only usually ultra-pastuerized (the worst kind), it is generally confinement fed holsteins eating organic corn/soy. A far cry from raw, grass fed, traditional breed dairy cow's milk. She also heartily recommends store bought organic butter (same issues) She tells us not to eat frozen food but readily recommends Ezekiel bread- which is sprouted but contains soy (she actually says whole soy can be part of a healthy diet). She tells us not to eat sugar, but then recommends yogurt with JAM for breakfast, oh yes, washed down with coffee. After her hard hammer on sugar, she recommends coffee, which can be just as damaging to the adrenals. Not to say I don't enjoy a nip of coffee here or there, but I don't recommend it as part of a healthy eating plan. Going on, even though she just told us sugar will surely kill us, you can have some homemade cookies and dark chocolate later in the day, even some wine. And even though her sugar chapter came down equally hard on starches, her diet plan is far from "low carb" or even moderately low carb, it is rife with suggestions to have homemade pizza, crepes, toast, toast, and more toast. Again, I am not saying I don't indulge in these things myself, but the fact that she includes them in her slim-to-none dietary recommendations is contradictory to say the least. How are those traditional? We all already eat things like that from time to time, so we don't need it to be recommended to us. What would actually be helpful is real traditional type food suggestions and maybe a handful of recipes (she gives 2 recipes, one for broth and one for liver). She also recommends lots of nut butter, including peanut butter, which I mostly avoid because of aflatoxin. Of course there is not mention if it is soaked (properly prepared) nut butters, she is recommending run of the mill "natural" nut butters. Oh! but not the ones with palm oil (she says they taste bad...?), which she previously assures us is a healthy fat, which only leaves nut butters made with CANOLA or SAFFLOWER OIL, the very industrial seed oils she tells us to eat under no circumstances. So at this point she has lost a lot of credibility with me. Or, it makes her more human, like me, she knows a lot about healthy eating but sometimes doesn't make the most ideal choices. But I did not write a book, and then at the end include my dietary compromises as if they are perfectly healthy. Overall, her "four pillars" and meal suggestions at the end of the book leave a lot to the imagination, which in this case is not a good thing! I can imagine a diet that might fall into her four pillars and her suggestions, but still be woefully inadequate in the fat soluble vitamins, proteins, and other co-factors necessary for the body to utilize those nutrients properly.

Either way, I can only recommend this book with reservations. I think Shanahan started out with great intentions, but did not follow through in all of her chapters. Some are very good and some are okay, but some left me scratching my head. I do think with a little more work and revision, this could be a 5 star book. But it has a ways to go.

If you are pretty new to traditional diets, this book is easy to read, even fun to read, and will probably give you lots of helpful information so you can take steps towards a traditional diet. If you are already into the traditional or primal type diet/lifestyle, this book will please you in some ways but probably let you down in others. Overall, I am glad I bought it because now I want to pick up a more thorough book on epigenetics. I also learned a few things, though many of the bases I already had covered. For the price, I am not sorry I bought it. Sometimes reading a book you can pick apart a bit helps establish where you do stand and what you do know. I really hope she comes out with a revised edition, or that her other book is much more solid, because I think Shanahan could be an important voice in the traditional foods movement. As good, not great, as this was, it just left a lot to be desired.

This Book Gets 10 Stars on a Scale of 5
By claudia
Deep Nutrition: Why Your Genes Need Traditional Food by Catherine and Luke Shanahan (she's an MD) is now in my own personal Top Ten books of all time. I could never say enough good things about this book; it's off the charts.

I'm a health nut from way back, always telling my friends the latest about Omega-3's, the horrors of trans-fats, the crucial need for Vitamin D and more. I learned most of it first from my sister, I admit, but I found Barry Sears by myself. My sis actually has a 1938 publication by Weston Price, and first got going with Adele Davis. I've read countless books, magazine articles, newsletters, and manuals trying to understand what's what. I'd trade all I've ever read about diet, nutrition, and health food for the book produced by Catherine and Luke Shanahan.

Regarding the massive amount of research these two have done, they have really sifted the chaff from the wheat. (Oh, but too bad about that metaphor, wheat is kind of on the outs now for me.) What we should be eating, and WHY, is what this book is all about. This narrative has unusual insights and connects things you would never expect to see in a book about nutrition. This book is so engaging and well written; you certainly come away with a bit of the personality of its authors (a couple of minor typos are not a problem for me, unlike the reviewer who gave it two stars).

Your paradigms will shift! You know sugar is a problem. How bad? Pretty bad. You need to know why. Catherine and Luke explain it is so well you will wonder why candy is ever allowed in schools. But cheer-up, nutrient rich foods are nothing if not delicious! The more flavor, the more nutrition. Rich cream is good for you, and butter! Who knew? Olive oil is still OK, but I did not know how much damage the canola, soy, sunflower, and other veggie oils where doing. I had no idea.

Vegans will have the biggest challenge in their path to health. Our bodies did not evolve eating soy and veggies alone. Soy has major issues, well explained here. I'm now eating liver and liking it (I am shocked, actually), making my own yogurt from raw milk and loving it (remembering trips to Greece), and learning to ferment veggies (delicious).

French cooks, Julie and Julia fans, rejoice. Those French sauces, creamy or made of stock from slow cooked bones, are not only yummy, but super healthy!

Young adults who are getting married and thinking about babies, PLEASE, PLEASE, PLEASE read this wonderful book before you conceive. There are way, way, too many unhealthy kids in the world. You want one that is as perfect as possible. Deep nutrition starts before conception.

Boomers....do you want to be in the joint replacement brigade, dealing with cancer or heart disease, forgetting stuff all the time? Of course not. READ THIS BOOK!!

Amazon readers are always told "If you liked this book, you will like _______" I didn't think it was possible to have another book out there as good as this one, but Nora Gedgaudas wrote one. Her book, Primal Body--Primal Mind: Empower Your Total Health The Way Evolution Intended, is one you probably should buy at the same time you order this one. These two books are joined at the hip. They fit together perfectly with minimal duplication. They both give jaw-dropping insights into who we are bio-chemically, and what we can do to survive in a world where profits drive food production and medical care.

If you don't have heath care (I mean sick care), BUY these books. You'll be fine, unless you are hit by a truck.
